Lamb Pulav Please!

By Mini Kommu

One of those Saturday evenings, when you would like to eat something delicious but the two hour nap and an hour and half movie, along with the inherent laziness that shows up every weekend, thwart all your elaborate weekend plans.

At barely a hour before we surpass a decent dinner time, I scurried into the kitchen to whip up an easy, yet, weekend-worthy one pot meal.

Minced lamb with Potatoes

Minced lamb was first cooked in a tomato-spice concoction. Potatoes, for the bite and Basmati rice for it’s aroma and delicate flavor were then added and mixed through. Water and salt went in before the pressure cooker was sealed and given charge to finish up the dinner.

Coconut masala about be stirred into the spicy tomato based masala.

While the lamb pulav was cooking away, a quick batch of rotis, along with methi(fenugreek leaves) panner(Indian cottage cheese) was quickly made mainly to cater to the vegetarian me. However, a healthy serving of leafy green, methi goodness and whole grains wholesomeness for the boys was a happy bonus!

Dinner was easy, delicious and as owing to the lack of time and mood, unexpectedly, click-worthy!
